  • Pizza Dough

    Pizza Dough

    Ingredient List:

    Water: 1 1/2 cups or 350mg
    Salt: 2 teaspoons or 15 grams
    Olive Oil: 2 teaspoons or 15 grams
    OS Flour: 3 1/3 cup or 380 grams
    Yeast: 1 teaspoon or 2 grams

    Steps to Prep:

    1. Add water to mixing bowl / bowl, add salt and olive oil
    2. Add OS flour and top with yeast
    3. Mix for 3 minutes, (it will be sticky)
    4. Oil hands with olive oil and sheet pan, and split into 3 8oz. dough balls at room temp (70-75F) covered for 1-3 hours, or until dough starts to rise, then put into fridge for 12-24 hours.
    5. Remove from fridge and rest at room temperature (70-75F) for 1-3 hours
    6. Shape by gently patting the dough using some of the OS flour
    7. Preheat oven to 500 with baking stone or baking steel or a cast iron pan in the oven to preheat
    8. Place pizza dough into preheated surface, and bake for 8-10 with fan on, and 12-14 minutes with fan off. Pizza dough is ready when it is light brown
    9. Remove pizza dough / flat bread carefully and cool off for minutes
    10. Top your pizza / flat bread with favorite toppings, and put back into oven until cheese melts / crust is brown

    Ingredient List:

    Water: 1 1/2 cups or 350ml

    OS Flour: 3 1/3 cup or 380 grams
    Yeast: 1 teaspoon or 2 grams

    Steps to Prep:

    Beaming Banana Bread

    Ingredient List:

    OS Flour: 1 1/2 cups or 171 grams
    Granulated Sugar: 1 cup or 225 grams
    Banana: 2 (very ripe / brown)
    Baking Powder: 1/2 teaspoon or 3 grams
    Baking Soda: 1/2 teaspoon or 3 grams
    Salt: 1/2 teaspoon or 3 grams
    Eggs: 2
    Sunflower Oil: 1/2 cup or 115 grams
    Yogurt: 1/3 cup or 75 grams
    Vanilla: 2 teaspoons or 12 grams

    Steps to Prep:

    1. Preheat oven to 350F with fan / 375F no fan
    2. Mix all dry ingredients in one bowl
    3. Mix all wet ingredients in separate bowl, including bananas
    4. Fold dry ingredients into wet ingredients
    5. Do not overmix :)
    6. Prepare into prepared loaf pan (spray pan, or use OS flour / butter to coat pan)
    7. Bake for 50-55 minutes or until toothpick comes out clean

  • Chocolate Chip Cookies

    Chocolate Chip Cookies

    Ingredient List:

    Butter: 1 stick and 2 tbsp. (140 grams)
    Granulated Sugar: 1/2 cup (90 grams)
    Brown Sugar: 2/3 cup (113 grams)
    Eggs: 2
    Vanilla: 1 teaspoon (6 grams)
    OS Flour: 2 1/4 cups (255 grams)
    Salt: 1/2 teaspoon (3 grams)
    Baking Soda: 1/2 teaspoon (3 grams)
    Dark Chocolate Chips: 1 cup (100 grams)
    Milk Chocolate Chips: 1/2 cup (60 grams)

    Steps to Prep:

    1. Preheat oven to 350°F no fan
    2. Mix wet ingredients: sugars and butter into bowl or mixer until fluffy
    3. Add eggs one at a time until incorporated
    4. Mix chocolate chips into wet ingredients
    5. In a separate bowl mix dry ingredients: OS flour, salt, and baking soda until well combined
    6. Fold wet ingredients into dry ingredients
    7. Bake now or for best results refrigerate dough overnight
    8. Place balls of dough on cookie pan with 3” of space between cookie / edge of pan
    9. Bake for 9-13 minutes (longer if you like them more crispy)

    Happy Jack Pancakes

    Ingredient List:

    OS flour: 1 cup or 110 grams
    Granulated Sugar: 1/8 cup or 25 grams
    Salt: 1/2 teaspoon or 3 grams
    Baking Powder: 1/2 teaspoon or 3 grams
    Baking Soda: 1/2 teaspoon or 3 grams
    Egg: 1
    Sunflower Oil: 1 1/2 tablespoon or 25 gram
    ButterMilk: 2/3 cup or 180 grams
    Vanilla: 1/2 teaspoon or 2 grams

    Steps to Prep:

    1. Put egg into mixing bowl, and whisk for 1 minute
    2. Mix all wet ingredients together
    3. In a separate bowl mix all dry ingredients together
    4. Add all dry ingredients to mixing bowl with wet ingredients, and mix together
    5. Do not overmix
    6. Make pancakes
    7. Pour batter into hot pan on stove, on medium heat, lightly oiled pan, flip pancakes when they stop bubbling

    Sunshine Muffins

    Ingredient List:

    OS Flour: 2 cups or 250 grams
    Granulated Sugar: 1 cup or 200 grams
    Baking Powder: 1 teaspoon or 6 grams
    Baking Soda: 1 teaspoon or 6 grams
    Salt: 1 teaspoon or 4 grams
    Eggs: 1
    Veg Oil: 1/2 cup or 110 grams
    Lemon Zest: 1 lemon
    Vanilla: 1 teaspoon or 6 grams
    Buttermilk: 1 cup or 250 grams
    Blueberries (or other garnish): 1 cup or 230 grams

    Steps to Prep:

    1. Preheat oven to 350F with fan / 375F no fan
    2. Mix all dry ingredients in one bowl
    3. In a separate bowl mix all wet ingredients, and then fold in garnish
    4. Fold dry ingredients into wet ingredients
    5. Place batter into muffin cups or loaf fan
    6. For muffins bake at 350F with fan, or 375F no fan, 13-17 minutes depending on desire of soft or crispy
    7. For loaf, bake at 350F with fan, or 375F no fan, 40-50 minutes or until toothpick comes clean
