Happy Jack Pancakes

Ingredient List:

OS GF Flour: 1 cup (115g)
Granulated sugar: 1/8 cup (25g)
Salt: ¼ tsp (1g)
Baking powder: ½ tsp (3g)
Baking soda: ½ tsp (3g)
Whole egg: 1 ea (55g)
Oil or melted butter: 1 tbs (15g)
Greek yogurt: 1/8 cup (60g)
Milk: 120g (1/2c)
Vanilla: ½ tsp (3g)

Steps to Prep:

1. Put egg into mixing bowl, and whisk for 1 minute
2. Mix all wet ingredients together
3. In a separate bowl mix all dry ingredients together
4. Add all dry ingredients to mixing bowl with wet ingredients, and mix together
5. Do not overmix
6. Make pancakes
7. Pour batter into hot pan on stove, on medium heat, lightly oiled pan, flip pancakes when they stop bubbling
